Healthier Coffee

Most of us drink one or three cups of coffee per day.  And most people use artificial sweeteners, skim milk, or even sugar to make coffee taste a little sweeter or more to our liking.  Well, ever tried unsweetened coconut milk?  Coconut milk and coconut oils are some of the healthiest things to put in our bodies.  Place 1/8 cup coconut milk in coffee mug then fill to the brim with black coffee.  Stir and devour.  It's easy and delicious.  For those of you who still need coffee to be sweeter, try vanilla flavored coconut milk.  Has a few more calories per serving but still yummy!

Storing frozen berries

Absolute best way to freeze any berry is to rinse them, lay them on a parchment lined sheet pan and place in freezer.  Once frozen, place in Ziploc bags!  Enjoy!

Zucchini Chips

Lots of fresh produce at the Farmer's Markets these hot summer days.  Turn zucchini or squash into "chips".  Slice zucchini into very thin rounds and season with your favorite spice blend or simply season with salt.  Place on cookie sheet lined with foil and sprayed with non-stick spray.  Bake for 30 minutes in a preheated oven at 250 degrees.  Remove and flip chips to other side and continue to bake until crispy, about 45-50 minutes longer.  Enjoy!!!!!

The perfect rice

Cook rice in a sauté pan, covered, instead of a sauce pan (pans with high sides). This allows the rice to cook perfectly because it has more surface area, it's in a single layer and allows the steam to circulate all around the rice. In a sauce pan, rice on the bottom overcooks, the rice in the middle is just perfect, and the rice on top is under cooked!
